Flavored with several varieties of chili, cayenne, and red pepper, expect some heat and deep, complex flavor. Using the same generations-old family recipes that his grandfather used at his Brooklyn Pork Market for 45 years, Giacomo cures his meats with celery powder - no BHT, BHA, or MSG are added.
